Calcium-rich Watercress Soup for Strong Bones

While living in the far north of India at the base of the Himalayas, I noticed how incredibly strong-boned both the men and women were who worked in the tea plantations each day.  Even those who were in their 70’s and 80’s showed no signs of arthritis, rheumatism or osteoporosis.

I asked why and was given a simple, very nourishing soup to try. It is the famous “Strong Bones Soup” from Simla, India. It is high in all the bone-building minerals Calcium, Strontium and Boron, plus the high Magnesium content from the Life Transfusion Liquid Minerals the body uses to  convert the Calcium into bones.

Serves 4

Ingredients:
2 quarts soy milk (ALWAYS organic)
1 large bunch watercress or a standard package from the supermarket
1 large red potato with skin
3 small shallot onions
1 Tbsp. virgin olive oil
6 vegetarian bouillon cubes
1 clove garlic, crushed
1 tsp. Life Transfusion Liquid Minerals

Directions:
1.  In a large pot, mince and saute the shallots in the olive oil until carmelized.
2.  Slice the potato and course chop the watercress.
3.  Bring the soy milk to a light, gentle boil.
4.  Crumble the bouillon cubes into the soy milk.
5.  Add the potato and watercress, simmer for 3-5 minutes.
6.  Add the Liquid Minerals.
7.  Puree the mixture through a food processor or blender.
8.  Add Bragg Liquid Aminos and pepper to taste.

Eggplant and Chickpea Curry

I discovered this wonderful curry recipe when I was living in the far north of India, in a mountain town called “Shimla” high up in the Himalayas. The smell of this curry seemed to float on the air every night, particularly during winter when it can get quite cold and snow can fall.

The ingredients can be found at any good Indian Spice and Condiment store or on the Internet at www.IshopIndian.com.

Make a double batch of this curry and store it in the freezer so you always have it on hand. I think it tastes better after a day or two when all of the flavors have blended together.

It is also wonderful served chilled during the hot, summer months.

Ingredients:
¼ cup peanut oil
¼ tsp. ground Asafetida from spice store
1 ½ teaspoons whole Cumin seeds
3 whole dried, hot red chilies
2 garlic cloves, lightly crushed and peeled
¾ pound of red potatoes, with skin, washed and cut into 1 ½ inch chunks
¾ pound of eggplants, cut crosswise into 1 ½ inch chunks
¼ pound large white mushrooms, cut into halves or quarters to match the size of other vegetables used.
½ tsp. ground Coriander
1 stick Cinnamon, broken into 4 parts
2-3 tsp. ground Turmeric/Curcumin
5 fresh curry leaves (use Holy Basil as an interesting substitute)
1 cup tomato puree
2 ¼ tsp. sea salt
¾ of a well-packed cup (around 3-4 oz.) of finely minced, fresh Cilantro – use the leaves, stems and the even the roots
2 ¼ cups (one 20 oz. can) drained chickpeas

Directions:
1.  Put the peanut oil into a large, wide pot and set over high heat.  When hot, put in the Asafetida and the Cumin. Let them sizzle for no more than 10 seconds.

2.  Put in the red chilies.  As soon as they swell and darken, (in just a matter of seconds) add the crushed garlic and the chopped potatoes.  Stir and fry for just a minute.

3.  Add the eggplant chunks.  Stir constantly for 2 minutes on medium flame or heat.

4.  Put in the mushrooms.  Stir-fry for one minute.

5.  Add the Curcumin and the ground Coriander.  Stir once and add the tomato puree and 5 cups of pure water (never tap water, always cook and drink pure, filtered water!)

6.  Add the sea salt, Cinnamon sticks, curry leaves, Cilantro and lastly, the chickpeas. Bring to a light simmer, never let it boil.

Cover, turn down the heat to low and cook gently for 35 minutes or until the vegetables are tender but not too soft.

Serves 4 hungry cricket fanatics! (The National game of India, the West Indies and Australia.)

Cinnamon/Banaba/Stevia Cocktail

This is a superb, all-natural means of regulating blood sugar.

Ingredients:

8 oz. glass of pure, filtered water

1  tsp. Cinnamon powder

1 pinch of Stevia herb from the health food store

1/2 tsp. Banaba herb.

If you cannot access Banaba herb easily, increase the Cinnamon powder to two tsp. and two pinches of Stevia herb.

Directions:

Whisk or stir together. Drink as needed.

Notes:

If wanting a warm drink, heat only the water, then add in the herbs/spices.

"High Healing" Jook-Congee Porridge Soup

Shiitake Mushroom Miso Soup

According to Joseph Forest, food consultant and editor of Cooking Vegetarian, the following soup is packed with therapeutic action from the olive oil, onions, garlic, miso and most notably, the Shiitake mushrooms.

These meaty, woodsy flavored mushrooms have long been recognized for their immunity boosting and strong anti-viral and anti-tumor properties.

Ingredients:

½ lb fresh shiitake mushrooms (12 medium sized)
½ Tbsp. extra virgin olive oil
2 small onions, diced
4 cloves garlic, crushed
½ tsp. dried thyme
½ tsp. dried marjoram
4 cups purified/filtered water
1 cube vegetable bouillon
4 Tbsp. miso paste
½ cup chopped fresh parsley

This is her very potent, natural antibiotic syrup which everyone should take each day, particularly if you have the flu or an infection.

Natural antibiotic syrup with lemon, garlic and honey

Ingredients:

(Note: You can cut this in half or even one-quarter to make a smaller amount at one time.)

1 bulb of fresh garlic, peeled and then crushed (must be crushed to release the active ingredients)
1 cup of organic honey (black honey is best, but not mandatory)
1 fresh lemon, quartered, WITH skin in tact, but seeds removed

Directions:
1.  Place the crushed garlic, honey and the lemon in a blender.
2.  Blend the contents until it becomes a smooth, thick paste.
3.  Pour into a glass jar with a good lid and store in the refrigerator.

DOSAGES:

The syrup (paste) can also be added to hot alternative milks (like organic soy, nut, hemp, coconut) or taken with tea. Pau d’Arco Herbal Tea, from South America, is an excellent herb for boosting immunity.

1. Immune System: to give strength to the immune system consume by mouth, ½ teaspoon in 1 cup of hot water as a tea, 3 times per day (or mixed as above.)

Flu, Chest Cold or Sore Throat: gargle with 1 tsp in 1/2 cup of hot water ever two hours during the day and before bed.

2. Lower Cholesterol: follow the above dosage.

3. To lower Blood Pressure: follow the above dosage and adhere to the immune system diet.

4. If you are fighting cancer, TB, polio, a severe cold, have symptoms of SARS, AIDS/HIV/Lupus or Multiple Sclerosis:

  • For an adult, consume one teaspoon every hour for 10 hours a day.
  • For a child, half this dosage level.

Dairy-Free Protein and Cinnamon Smoothie

For 2 drinks.

  • 1 cup Strawberries or kiwi fruit or cantaloupe/honeydew melon, sliced
  • 1 Banana, sliced
  • 1 cup Papaya, Mango or Pineapple, chunked
  • 8oz soft tofu (VitaSoy or Nasoya brands are best) from health food store (if soy/tofu make you constipated, substitute 1/2 cup Hemp protein, a wonderful protein from hemp seeds that happens to also provide Omega 3 and 6 essential fatty acids and important fiber.)
  • 2 tsp. Cinnamon powder
  • 1 cup organic apple juice
  • 1 Tbsp. Wheat Germ granules
  • 1 Tbsp. Lecithin granules
  • 1 tsp. Brewer’s Yeast powder
  • 1/2 tsp. Ginger Powder
  • 1/4 tsp. Stevia powder or liquid from health food store

Put in blender and whisk for 15 seconds.
